I’m all about coming up with new, exciting ways to enjoy a warm piece of toast in the morning. Just start at the basics with some really high quality, whole wheat bread and then you can go in a number of different directions with this concept! Sweet, savory… a mix of both maybe?
Here is my most recent idea. I’m calling it Tropical Fruit Toast… although the fruits I used aren’t too “out there”. The shaved coconut and mango remind me of my vacations to Mexico!
The mangoes at the grocery store are starting to get reallllllly good. Also, I love incorporating coconut into my cooking too because it contains all sorts of healing properties. The coconut meat contain lauric acid which helps fight bacteria and ward off infections from the common cold to much more severe ailments. It also supports thyroid and promotes healthy digestive activity!
See?! And I spend so much time talking about food that is pretty… it’s healing, too!
What will you need:
2 whole wheat pieces of bread
A variety of sliced fruits – I used mango, bananas, mandarin oranges and strawberries
2 tbsp almond butter
2 tbsp coconut flakes
How do you make it?
Pretty straightforward and I’m pretty sure there is no real need to explain this step by step, but hey, I took the pictures! Toast your bread, spread the almond butter on top, then the coconut flakes.
Sidenote: If you don’t have a toast-r-oven, GET ONE. I use it for EVERYTHING.
Add your sliced fruits on top in a pretty pattern.
