I went out to treat myself to a frozen yogurt today at a new place near my work. This place boasted over 300 different toppings and they were definitely telling the truth! One of the areas of the topping bar was dedicated to a variety of flavored streusel toppings that looked delightful. Needless to say, I helped myself to a couple of spoonfuls. I liked it so much that I got to thinking… what if I want to recreate this texture when I’m at home enjoying some Chobani or something?
Streusel is a crumb-like topping that typically goes on coffee cakes, muffins, crisps and a variety of other baked goods. In its most basic form, its made by combining flour, sugar, cinnamon and butter. Not that there’s anything wrong with that, but I don’t always want to be topping my healthy yogurt with butter and sugar. Wouldn’t that defeat the purpose a bit?
Then I remembered when I made this little gem; strawberry-infused yogurt with a pistachio crumble topping. How perfect! One is pretty much a direct substitute for the other as far as the taste goes, but with my version you get healthy from the pistachios and you can skip the butter. This is a great post-workout snack because you’ve got protein, natural sugars, fats and a bit of carbohydrates to replenish what you lost while you were sweatin’ it out.
What will you need?
1 cup plain or vanilla greek yogurt
6 medium strawberries, finely chopped (save 1 for a garnish!)
1/4 cup raw pistachios
1/2 tsp dark brown sugar
1/2 tsp cinnamon
pinch of nutmeg
How do you make it?
In a small food processor, blend the pistachios, cinnamon, nutmeg and brown sugar until it becomes a fine, powdery consistency. Set on the side.
In a small bowl, combine the chopped strawberries and yogurt. Mix well.
Serve everything in a cute bowl and garnish with some sliced strawberries. This is exactly why I never listen to people who say you can’t have the best of both worlds!
