Crispy Parmesan + Zucchini Fries

Tomorrow the nation will attend parties, celebrate rivalries, join with friends and family and enjoy lots of food in honor of the culminating event of the most amazing sport in the world.  The Superbowl is a time that food (and antacid sales) go through the roof, so what are you going to make?

This is a great party idea that is crispy on the outside and juicy on the inside… it might just help people realize just how tasty zucchini can be.

What will you need?

3 large zucchini, cut into matchsticks

2 large eggs

2/3 cup dried bread crumbs

2/3 cup grated parmesan cheese

1 tbsp dried oregano

1 tbsp dried basil

1 tsp paprika

Kosher salt, pepper

How do you make it?

Preheat your oven to 375 degress. Wash the zucchini and cut into matchsticks.

In a medium bowl, combine the grated parmesan, dried bread crumbs, oregano, basil, paprika and mix to combine.   In another medium bowl, whisk together 2 eggs.

Dip each zucchini stick into the egg mixture and then dip them into the bread crumb mixture to coat the outside.  Put the zucchini on a greased, rimmed baking sheet and bake for about 25 minutes, check on the progress after 15 minutes and toss them around a little bit.

Serve them plain or with some sort of dipping sauce that sounds good!  I’ve heard that marinara sauce works quite well.

    This was a great recipe! And so easy! I had to substitute bread crumbs for oyster crackers, and parmesan for a pinch of mexican cheese because I forgot to go to the store, but it still turned out great! I can’t wait to take leftovers for lunch tomorrow.. thank you!!
