Wait… what’s that crunch I hear? That beautiful sound that is so undeniably indicative of fresh food? Well in this case, it’s broccoli. Raw broccoli, to be exact and it’s almost gone because I have eaten my weight in this beautiful salad in the past 24 hours. Sorry I’m not sorry that I have a ton of green stuff stuck in my teeth.
There’s no need to over complicate things, here. Nothing’s cooked, nothing is processed, very few dishes get dirty. Just good, wholesome food that your body is going to love. I guess I’m calling it a Crunchy Raw Broccoli + Salad and I’m excited to share it with you on this snowy, Minnesota evening.
I love this salad for a few reasons, aside from just the way it tastes… but rest assured, the flavor is out of this world.
1.) It is so easy to make! The majority of your effort will be in the chopping and slicing side of things. You just need to throw all of the ingredients together and toss with some sauces!
2.) It refrigerates SO well so you can enjoy it allllll week long. Make a huge batch at the beginning of the week and eat it for lunches or dinners Monday – Friday… nonstop.
3.) Can you say absolutely PACKED full of nutrients? Fiber, Vitamin A, Vitamin C, protein, phytonutrients, potassium, antioxidants, healthy fats… there is literally nothing in this salad that isn’t absolutely beneficial to your body.
What will you need?
1 bunch broccoli (about 3 stalks), chopped stalks and florets
1 small red pepper, seeded and sliced
1/2 small red onion, sliced or diced
2/4 cup unsalted, raw cashews
1 tbsp rice wine vinegar
1 tbsp tamari or soy sauce
1 tbsp toasted sesame oil
Ground pepper, kosher salt
How do you make it?
Chop up all of your vegetables and toss together in a large bowl with the vinegar, sesame oil and tamari. Place in a large container and let the flavors combine for about 30 minutes and the vegetables will soften a bit! Sprinkle the raw cashews on top before eating to avoid them getting soggy.
