This is yet another one of those “recipes” that I came up with completely on accident. I was in my kitchen around lunch time last weekend making something entirely different using strawberries and basil, and I realized that I have never eaten bacon with strawberries. I knew that I had some bacon in the freezer and it started to sound really, really good.
The combination of sweet strawberries, fragrant fresh basil, acidic balsamic vinegar and salty bacon makes this salad quite the experience! It’s pretty, it’s unique and I am honored to share the idea with you.
The first thing my roommate said when she got home was that the house smelled good. Maybe you’ll be a better roommate than I am and save some to share?
What will you need?
2 cups of crispy greens (I used romaine)
3/4 cup strawberries, diced
6 fresh basil leaves, chopped
2 tbsp crumbled feta
1 tbsp olive oil
1 tbsp balsamic vinegar
5 slices of thick bacon
How do you make it?
In a medium skillet, start cooking your bacon slices. Cook to the point of satisfaction (everyone likes their bacon just-so), remove from the heat and reserve on the side.
In a medium bowl, combine the diced strawberries with the fresh basil leaves, olive oil, balsamic vinegar and ground pepper.
Using a pretty white plate, tear your romaine into nice bite-sized pieces and create a bed of lettuce for your strawberry and bacon toppings.
Sprinkle about half of your strawberry mixture over the top…
Add the salty feta cheese, perfectly crispy bacon slices and the rest of your strawberry mixture over the top (if you haven’t eaten it with a fork yet)…
